♫♪ Do you wanna eat a snowman? ♪♫

Frozen has quickly become the favorite movie at my house.  We have seen it twice and can't wait for it to be released to DVD on March 18.  My children (okay, and me) sing the songs all day and know every word to each of them.  It's funny, because I really didn't even want to see it when I first saw the extended preview.  I am so glad I went with them, because I truly love it as much as they do.  The story is fabulous, and I feel a strangely deep, emotional connection to each of the characters.  That is rare with an animated film.

While Elsa and Anna are truly lovely, and we adore Kristoff & Sven, our absolute favorite character is Olaf.  I mean, what's not to love about this quirky little snowman who dreams of summer.  He's adorable and kind, gentle and loyal, and just plain funny.  Josh Gadd did an amazing job of bringing this character to life.

We are having a rare winter storm right now in our area, so I decided to celebrate our "frozen" weather with a Frozen bento.  Olaf was the obvious choice for me and absolutely delighted my children and my husband, as well.  He happened to be home today due to the weather and was able to enjoy the bento, too.  I actually made four of them, one for each of us, instead of my usual two.  I'll be honest that it took much longer to make all four of them than I am used to.  I am glad I usually only make two!

I hope you enjoy this one as much as we did!

Baked Potato Bento

Baked potatoes are not something my family eats very often, but I recently realized that they make a great lunch, especially on a cold day.  They fit perfectly in the large compartment of our EasyLunchBoxes, and if you wrap the potato in foil, it will stay nice and warm.  You can either cut it open, prepare it and then wrap it in foil, or leave it in tact with the toppings in the box and ready to assemble at lunchtime.  Either way, especially if stored in an insulated bag, your potato should be nice and warm come lunchtime.  For mine, I made homemade bacon bits with some leftover bacon I had on hand, added a little butter and cheese and that was it.

Baked potatoes are great in that they can be dressed however you see fit.  They are wonderful with steamed broccoli and other veggies.  They taste amazing topped with ranch dressing and chives.  Add taco ingredients and salsa for a fun and delicious spin on the traditional potato.  Try it with BBQ sauce and chopped brisket.  You can use vegetable or chicken broth in place of butter.  The options seem to be endless!  I love thinking beyond the standard sandwich lunch, and this certainly fits the bill!
What's in the Box?
Baked Russet Potato w/ Butter, Colby-Jack & Bacon
Celery & Carrot Sticks, Snap Peas, Tri-Color Cherry Tomatoes
Clementine & Raspberries

I love comments and would love to know what is YOUR favorite way to top a baked potato?

Cobb Salad & Van's Multigrain Chips

This post contains affiliate links

I was so excited earlier this month when I was contacted by Van's Natural Foods asking if I was interested in reviewing some of their new products.  My family has been enjoying Van's products for years, so I jumped at the opportunity to try these new items.

Today's lunch included Van's Nacho, Nacho, Man! Multigrain Chips.  I paired the chips with a cobb salad and fresh fruit, and my children were thrilled.  Gluten-free and made with brown rice, oats, millet, quinoa and amaranth, these nutrient-rich chips eliminate all the guilt, while keeping the flavor you would hope for in a chip.  In fact, they are way tastier than your traditional unhealthy chip that is made with artificial ingredients.  My 13 year old said these were delicious and my almost 5 year old said they were the yummiest chips he's ever had!  Chips are not something I typically ever buy, so this was a real treat for them, and something I will feel good about buying in the future.
