That's one sweet potato...

Nutrient-rich sweet potatoes are a perfect addition to any lunch.  Packed with Vitamins A, C and B-6 (among others), as well as calcium, potassium, folate and beta-carotene, sweet potatoes truly are a super food.  Not only that, they are delicious and easy to prepare.  I baked mine in the oven, but they can also be steamed, boiled, mashed or cooked in the microwave.  I don't add anything to mine - they are perfect just the way they are!
What's in the Box?
Baked Sweet Potato
Whole Grain Toast
Baby Cucumber, Celery, Mixed Bell Peppers
1/2 Apple with Sun Butter for dipping

  1. What a great lunch! I love sweet potatoes and haven't included them in lunches before, but think it's a fantastic idea! We use sunbutter in our house too. I notice you have it in an open cup. Does it make much of a mess or does kiddo not mind? I've just tossed it into a compartment in my ziploc containers but know that the EasyLunchBoxes leak and would be worried about the mess.

  2. Hi Jacey! This lunch was eaten at home, so we didn't have to worry about the Sun Butter spilling. I would use a mini-dipper or other covered container for it if the lunch was traveling. Thanks for commenting!!
