Nutrient-rich sweet potatoes are a perfect addition to any lunch. Packed with Vitamins A, C and B-6 (among others), as well as calcium, potassium, folate and beta-carotene, sweet potatoes truly are a super food. Not only that, they are delicious and easy to prepare. I baked mine in the oven, but they can also be steamed, boiled, mashed or cooked in the microwave. I don't add anything to mine - they are perfect just the way they are!
