I have many Christmas theme bentos planned for this month, so deciding on one to make for this blog hop took some thought. As many of you know, my little Super Tot has severe food allergies to peanuts and several tree nuts. Finding safe treats can be a bit of a challenge. Last year, my sister surprised us with a visit at Christmastime (she lives 1/2 way across the country), and she brought along a special gingerbread cookie for Super Tot. It was in a little tin with the following Allergen Statement on the back: "Made in a peanut and nut free facility." He loved the cute little cookie and was so excited that it was safe for him to eat. We were not able to find more of them last year, but last week on a trip to my local grocery store, I FOUND THEM!!! I purchased several and Super Tot was thrilled.
In honor of our favorite holiday treat - and Super Tot's allergies - I decided to make a Gingerbread Man Bento.

Gingerbread Men - Panko covered Rice w/ Cheese, Nori, Bell Pepper & Cilantro accents
